This is a great book if you want to understand the fundamental science behind good food but it's not a standard cookbook are there are very few recipes. If you like to experiment in the kitchen, however, it might be for you. For the recipes that are provided, there are lots of suggestions for variations that you could make to produce a different cuisine or taste.

This book is my cooking bible. I read it cover to cover as soon as I got it, and sometimes still just open it to marvel at the charts and illustrations. I regularly use this book to help guide me in the kitchen and elevate my cooking. I recommend this book to anyone and everyone I meet who has any interesting in cooking, in becoming a better cook, or in learning how to cook at all. Samin changed the way I approach food and cooking and I will never be without a copy of this book.
