Apparently David Chang is a butt. The techniques in this book are still solid.

This was embarrassing to read. Basically a 'professional' chef who has been cooking at home for one year and then thinks he should write (well 'talk', Priya wrote) a whole 'not' cookbook about the things home cooks already know and have been doing for centuries. Priya's comments on what a d*ck Dave is are kind of funny I guess, the first essay was embarrassing as well, didn't bother to read the others.

Interesting, perhaps, to the novice cook who doesn’t enjoy following recipes but hasn’t developed enough techniques to keep home cooking interesting yet. I’ve enjoyed cooking and reading from both authors but this one was not for me. I was out way before they even got to the food.

Interesting book. I prefer having recipes as a guide so this book’s approach to general guidelines instead of a recipe form isn’t for me. Having said that, I like the flow chart for stir frying, the interviews with experts on food science, OHS, etc and the chapter on microwaves, which I wish cook books would highlight more!
