Beautifully photographed, but a rather intimidating book even though the concept is simple. Planning to try the baked sausages, apples and blackberries and the oven baked beans with rosemary and chili. Lots of dishes have olives which I love but my partner doesn’t, so I’m also earmarking baked rice, green olives, orange feta and dill for a time when he’s out of town!

Edited April 2021: re-read for cookbook club. Made the chicken thigh, sausage, pepper and onion dish. It was good but nothing ground breaking.

The photography in this book is dark and contrasty, really brings out the color and textures of these baked dishes. I made the Chicken with Lemon, Capers & Thyme, and snapped the other recipes I want to try in future. Henry really has a flair for flavor combinations... seriously, just reading the herbs she chooses for each recipe makes my mouth water.

You’ll venture into some uncommon ingredients in this book, but the preparation is really quite simple for most of the dishes, so acquiring the goods might be the most time you’ll spend. I think what I liked best about the assortment is the nature of noticing the way the flavors will work together in these dishes will help you be a better cook overall.

This is a treasure trove of recipes with seasonal ingredients, some complex, some less so. I will be trying a bunch of these. Gorgeous photography.

Yum yum yum - Diana Henry does it again! And this time with the most minimal effort, so what's not to love? I have a few "traybake", "one pan/pot" style cookbooks but none are as inspired as this one. Where they pare-back, limit and condense, Henry knows that now is the time to go all out - the oven mellows and melds, so don't hold back.

The richness of Henry's flavours coupled with the elegance of her writing makes for a near-perfect cookbook. She waxes lyrical in her inimitable style on the wonder of oven cooking, giving us the romance I've come to associate with Henry's books.

There is not a recipe in here I'm not keen to try (even the fish!) but some had me salivating more than others: duck with Asian-flavoured plums; pork chops with beetroot, apples, caraway and paprika; lamb fillet with herb butter, radishes and peas; sausages, apples and blackberries with mustard and maple syrup; chicken with feta, dill, lemon and harissa yoghurt; chicken with plums, honey and pomegranates; chicken with sherry, raisins and bitter leaves; Moroccan roast vegetables with labneh; roast corn, courgettes and peppers with cumin, chilli, sour cream and avocado... honestly I could go on and on and I'm only a third of the way through. I haven't even reached desserts yet...
