Stick Dog Gets the Tacos (2019) was written and illustrated by Tom Watson, and is a great book for middle and upper elementary students. Stick Dog and his friends are alarmed by reports of animal cruelty and rush to the rescue, only to find out that there is no emergency after all. There is, however, a lot of food, and this book tells (and shows, through quirky illustrations scattered throughout the text) about the dogs' adventures as they try to eat as much of the food as possible without getting caught.
This book, along with the rest in the series, would serve as a great transition from reading picture books and graphic novels to reading chapter books. The text is spaced out with short, one to two sentence paragraphs and plentiful illustrations that show just as much as the text tells. It could be used for individual reading time or partner reading in a classroom, and the humor would keep kids (especially boys) engaged in reading.
